Red mullet in flaky pastry with green tapenade

Ingredients: 1 can Maison Raymond green tapenade, 4 red mullet filets, 1 clove garlic, 1 bunch basil, 4 sheets of filo pastry, 5 cl olive oil, pepper.
 
Cut the filo pastry sheets in 2 and brush wih olive oil. Put a spoonful of the tapenade, basil, garlic mixture on each half-sheet. Deposit a red mullet filet. Add pepper. Close the filo sheets like bonbons by tying up the ends with a string. Brush with olive oil and put on a baking sheet. Bake 5-7 min at 220°C. Serve immediately and decorate with basil leaves.
