Roast pork with goat cheese

Ingredients: 1 can Maison Raymond black tapenade, 1 roast pork, 8 mint leaves, 1 log of goat cheese, salt, pepper and olive oil.
 
Preheat oven to gas mark 7. Slice the goat cheese log into 8 equal rounds. Remove string from pork, cut down the middle lengthwise. Spread the tapenade on both sides of the roast on the insides. Put the goat cheese on the lower part and add a whole mint leaf to each. Close the roast, tie up with string, lightly salt and pepper. Roast approximately 45 min., basting from time to time.
